How to Make Mom Made Yummy Chicken Biryani

Yummy chicken biryani ready in just 30 mins !!!

Simple steps to make yummy chicken biryani :-

1.Add chicken, ginger garlic paste, red chili powder, masala powder, 1 1/2 tbsp curd / yogurt, salt & turmeric.

2.Mix it well and set aside for at least 30 mins to 1 hour is suggested. Marinating time depends on your convenience. The longer you marinate, the softer chicken you get. You can also marinate the previous night and refrigerate. Cover the bowl with a plastic bag while refrigerating.

 3.Wash rice and soak it about 30 mins. Drain the water completely and set aside. Add oil to your pressure cooker. Saute cinnamon, cloves, shahi jeera, cardamoms, until they begin to sizzle.

4.Add onions and fry until they turn little dark.

5.Add garlic ginger paste and fry it until the raw smell goes completely.

6.Add chicken and saute..

7.Saute until it turn pale.

8.Add chopped tomato, pudina, coriander, red chili powder, 1 1/2 tbsp curd / yogurt.

9.Mix and fry until the tomatoes turn mushy. If you’re using large chicken leg pieces, you are suppose to cover and cook at this moment.

-Add briyani or garam masala powder.

-Stir & saute for 1 min.

-Evaporate the moisture completely.

By now, the chicken is almost cooked.

10.Add 3 1/4 cups of water and little salt in a separate bowl. Stir and check if the salt is little since we have already added salt for marination. So, a little amount is far enough. Then, all them to pan and bring it to boil.

12.Cook until the water evaporates almost but still soggy..

13.Cover and cook on a medium flame until the rice is fully cooked. Some variety rice needs more water. If using normal rice, add 1/4 cup more water.

14.If you’re using a pressure cooker, cover it by now and cook for just  3 – 5 mins on the lowest flame. Don’t let the cooker whistle if you’re using basmathi rice. If you’re using normal rice, allow to whistle once.

15.When the pressure gets off, open the lid. Sprinkle chopped coriander leaves and add boiled eggs. Fluff up gently and cover it to rest for a while. Serve with onion raita to have better taste.

Ingredients –

Dry spices to temper

  • 1 bay leaf patta
  • 3 green cardamoms / choti elaichi
  • Small cinnamon stick / dalchini
  • 4 – 6 lavang / cloves
  • 1 star anise / chakri phool
  • 1/2 tsp. shahi jeera / caraway seeds

Marination

  • 1 1/2 tbsp curd / yogurt
  • 1 tsp. ginger garlic paste
  • Salt as required
  • 1/4 tsp. turmeric / haldi
  • 1/4 tsp. red chili powder / lal mirchi powder
  • 1/23/4 tsp. briyani masala or garam masala powder

Other Ingredients

  • 1/2 kg chicken
  • 2 cups of aged basmati / chawal
  • 3 1/4 cups water or thin coconut milk ( use little more water if using normal water )
  • 2 tbsp oil
  • Salt as required
  • 1 medium tomato
  • 1 1/2 tbsp curd / yogurt
  • 10 mint leaves / pudina finely chopped
  • 12 stems coriander leaves finely chopped
  • 1 1/2 tsp ginger garlic paste
  • 2 green chilies chopped
  • 1 large onion sliced thinly
  • 1/4 tsp. red chili powder

To Powder (or) use 2 tsp ready-made briyani or garam masala

  • Very small nutmeg piece
  • 4 green cardamoms / choti elaichi
  • 1/41/2 tsp. pepper corn
  • 5 cloves / lavang
  • small cinnamon stick / dalchini
  • 1/2 tsp. fennel seeds / saunf
  • 1/2 tsp. stone flower / kalapasi (optional)

Note – Don’t use thick coconut, briyani may look curdled.
